The findings indicate that when choosing Palmiers, “locals” place the highest importance on brand reputation and local identity, while the classic crispy texture and Palmier original flavor remain the dominant preferences. Among the various brands, Imperial Patisserie stood out with a significant lead, being selected as the most favourite Palmier brand in the eyes of Hong Kong people.

The survey revealed that nearly 80% of respondents prioritize “good brand reputation” (40.0%) and “Hong Kong local brand” (38.3%) when purchasing Palmiers, reflecting that consumers not only seek delicious taste but also value brand credibility and local sentiment. In terms of texture, over half (55.1%) of respondents consider “crispy texture” the most important factor, followed by “rich buttery flavor” (18.7%) and “balanced sweetness” (13.9%).
